Bourekas Tray

I know the holidays are just around the corner and all that's left to do is turn off the stoves and wear white, but, for a second, I can't help but share a quick, simple, and successful recipe with you.


Come on. The simplest thing in the world. A package of puff pastry? Divide it in half.

Place one half in a pan.

Spread the filling evenly. Leave a little margin, but just a little.

Place the second half of the dough on top of this. Make cuts in the dough, so it will be easy to cut later.

A little scrambled egg with sesame seeds. And into the oven.

That's it. Here's a Bourekas tray.

Borax tray

Materials

  • A package of thawed puff pastry

  • 2 cups grated mozzarella

  • 1 cup feta crumbs

  • 1 cup ricotta cheese

  • 1 cup cottage cheese

  • 1 cup of thawed spinach or 1 cup of cooked spinach at room temperature, drained of liquid

  • 1/2 teaspoon salt

  • 2 eggs + 1 egg for brushing

  • Topinic, sesame seeds, poppy, hyssop, sumac,

How to prepare

  1. Preheat the oven to 375 degrees.

    Line a baking sheet with baking paper and grease it with oil.

  2. In a large bowl, place mozzarella, feta, ricotta, cottage cheese, spinach, salt, and two eggs. Mix well until you get a uniform filling.

  3. Divide the puff pastry in half. Place one half in a baking pan. Spread the filling evenly over the dough. Leave a small margin to close the bourekas.

    Place the other half of the puff pastry on top of the dough with the filling. Using a pizza roller or sharp knife, cut the surface of the dough into smaller bourekas. You don't have to cut all the way through. Just mark the cutting lines. This makes it easier to continue cutting after baking.

    Brush the surface of the bourekas with beaten egg and sprinkle with sesame seeds.

  4. Place the pan in the oven and bake for 50 - 55 minutes or until our pastry is crispy, browned, and has a beautiful color.

  5. Remove the borax from oven, let it cool for a few minutes, and complete the cuts into small bourekas. That's it. Enjoy!
